Ingredients
- 1 stick (1/2 cup) butter, softened
- 1 1/4 cup sugar
- 2 egg yolks
- 3 whole eggs
- Zest of half lemon
- 1/2 cup milk
- 1 cup rice flour
- 1 1/2 cups regular all-purpose flour
- 2 teaspoons baking powder
- Powdered sugar, for sprinkling
- Paper baking cups
Instructions
- Preheat oven to 355°F. Line a baking sheet with paper baking cups.
- In a large bowl, mix together the softened butter and sugar using a hand mixer
- until light and fluffy.
- Add the egg yolks and blend, then add the whole eggs and blend again. Mix in
- the lemon zest.
- Pour in the milk and blend until smooth.
- Add rice flour, then blend.
- Add all-purpose flour then blend.
- Add baking powder, then blend. The batter should be thick.
- Transfer the batter into a piping bag or a Ziplock bag with a corner cut off.
- Fill each paper baking cup about halfway. The batter will rise during baking.
- Bake for 30 minutes.
- Allow to cool slightly, then sprinkle with powdered sugar before serving.
